Step 1
In warm milk (36-37°C or 97-98°F), dissolve the sugar and yeast. If using fresh yeast, wait until bubbles form.
If using dry instant yeast, mix it with the flour instead.
Add the beaten eggs and mix well.
Gradually incorporate the flour until the dough takes on a coarse texture.
Then add the butter and knead until elastic and smooth, about 10-15 minutes on low speed.
Step 2
Place the dough in a warm spot and let it rise for about 1 to 1.5 hours, or until it doubles in size.
Step 3
After rising, punch the dough down. For the cinnamon rolls, you will need about 550-580 grams of dough.
Roll it out into a rectangle approximately 30x40 centimeters (12x16 inches).
You can freeze any remaining dough for future use.
Step 4
In a bowl, mix together the softened butter, sugar, instant coffee, cocoa powder, and cinnamon until smooth and well combined.
Step 5
Spread the tiramisu filling evenly over the rolled-out dough.
Cut the dough into strips about 4-5 centimeters (1.5-2 inches) wide, depending on your preference.
Tightly roll up each strip into a log.
Step 6
Place the rolls in a baking pan, spaced about 1 centimeter (0.5 inch) apart.
Cover them with a towel and let them rest at room temperature for 30-40 minutes.

Preheat your oven to 150-160°C (300-320°F).
Bake the rolls for about 40-50 minutes, or until golden brown.

While the rolls are baking, combine the cream cheese, milk, sugar, and instant coffee in a microwave-safe bowl.
Heat gently in the microwave until the mixture reaches 25-28°C (77-82°F), then whisk until smooth and creamy.
Step 9
Once the rolls are out of the oven, pour the tiramisu cream over the hot rolls.
Let them cool slightly before serving. Enjoy your delightful tiramisu cinnamon rolls!
