Step 1
In a mixing bowl, combine sifted flour, spices, and butter. Mix until the mixture resembles coarse crumbs.
Slowly pour in ice water, mixing briefly. You do not need to overmix; just bring the dough together into a ball.
Place the dough ball into a ziplock bag and refrigerate for about 20 minutes.
Step 2
After chilling, roll out the dough very thinly. This is best done between two sheets of parchment paper to prevent sticking.
Once rolled out, transfer the dough to a baking sheet, ensuring it is in a circular shape.
Step 3
Spread your chosen filling (sliced tomato and feta cheese) evenly over the dough, leaving about 2 inches of border around the edges.
Optionally, add more cheese if using blue cheese, then fold the edges of the galette over the filling.
Brush the edges with a beaten egg yolk for a golden finish.
Step 4
Bake in a preheated oven at 200°C (400°F) until the crust is golden and the filling is bubbly, about 25-30 minutes.
Once baked, let the galette cool slightly before garnishing with fresh basil.
