Ingredients
For the Dough

For Glazing (Optional)

Instructions
Step 1
In a large mixing bowl, combine 300 grams of all-purpose flour with 150 grams of softened unsalted butter and 100 grams of granulated sugar.
Add one large egg, 1 teaspoon of vanilla extract, and a pinch of salt to the mixture. Using your hands or a mixer, blend until you achieve a smooth, cohesive dough.
Wrap the dough in plastic wrap and refrigerate it for up to five days.
Step 2
When ready to bake, take the dough out of the refrigerator a little ahead of time to soften.
Divide the dough into several parts and roll it out to your desired thickness. For traditional kozyli, aim for a thin consistency to ensure even baking.
Step 3
Preheat your oven to 180Β°C (350Β°F). Lay the rolled-out dough on a baking sheet and cut out your desired shapes.
Bake the cookies in the preheated oven for about 8 minutes, keeping in mind that thinner cookies will bake quicker.
Once baked, let them cool on a wire rack.
Step 4
If you wish to add a glaze, mix 1 egg white with 150 grams of powdered sugar and 1 tablespoon of lemon juice until smooth.
Once the cookies are cool, drizzle this glaze over the top for a festive finish.

Equipment
This is essential for rolling out the dough to your desired thickness. A marble or wooden rolling pin works best for even results.

Use a flat, sturdy baking sheet. Lining it with parchment paper will help prevent sticking and make for easy cleanup.

To ensure your cookies bake at the right temperature, an oven thermometer is a smart investment. Ovens can sometimes be off by a few degrees!

A simple whisk will help you combine eggs, powdered sugar, and lemon juice to create a smooth icing for decorating your cookies.

Variations
Faq
- What if my dough is too sticky?
If your dough is sticky, try chilling it in the refrigerator for an additional 30 minutes. This will help firm it up and make it easier to roll out.
- How can I tell when the cookies are done baking?
Keep an eye on them as they bake. They should be lightly golden around the edges. Thin cookies will bake faster, usually around 6-8 minutes, while thicker ones may need a few minutes more.
- Can I add flavors to the dough?
Absolutely! Experiment with vanilla extract, almond extract, or even spices such as cinnamon or nutmeg to elevate the flavors of your cookies.
- How do I store the cookies once they're baked?
Store your baked Kozuli in an airtight container at room temperature. They'll stay fresh for about a week, or you can freeze them for up to three months!
- Can I use different types of icing?
Yes! Feel free to experiment with different icings or glazes, such as chocolate, royal icing, or buttercream β just ensure they are set before stacking your cookies!
- What happens if my cookies puff up too much?
If your cookies rise too much, they may become fluffy instead of crisp. Make sure to roll the dough to your preferred thickness and avoid over-mixing!
