Step 1
Start by preheating your oven to 350°F (175°C). In a large mixing bowl, combine *flour*, *sugar*, *cocoa powder*, *baking powder*, *baking soda*, and *salt*. Mix well to distribute all dry ingredients evenly.
Add in the *eggs*, *milk*, and *oil*. Mix on medium speed until everything is well combined and smooth. Pour the batter into a greased and lined cake pan and bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow it to cool.
Step 2
While your cake is cooling, take a bowl and whip the *heavy cream* until soft peaks form. Gradually add *powdered sugar* and whip until well combined.
Fold in the *mixed berries* gently to maintain their shape. This berry cream will add a fruity flavor to your cake and is easy to prepare!
Step 3
In a saucepan, heat *heavy cream* over medium heat until it just begins to simmer. Remove it from heat and pour it over the *chocolate chips* in a bowl. Let it sit for about 2 minutes before stirring until smooth.
This rich ganache can be used both as a filling and for frosting the outside of your cake. Adjust consistency with more cream if necessary.
Step 4
In a bowl, mix *powdered sugar*, *corn syrup*, and *vanilla extract* until a dough forms. You want the mass to be consistent and workable without being too sticky.
This mass will help you create decorations for your cake. Allow it to sit at room temperature for a bit before you start shaping.
Step 5
Once your biscuit has completely cooled, slice it in half horizontally to create two layers. Spread a generous amount of the *berry cream* between the layers.
Cover the entire cake with *ganache*, using a spatula to create a smooth finish. Use the sculpting mass to create *reindeer* decorations that can be placed on top of the cake. Let your imagination run wild with how you want to decorate!
