Step 1

Prepare the Dough

In a mixing bowl, combine the flour, cottage cheese, and chilled butter (100 grams), which should be cut into small pieces.

Quickly mix the ingredients by hand until the butter pieces are incorporated. Avoid overmixing to ensure the dough remains light and tender.

Step 2

Mix Additional Ingredients

Add 1 egg and salt to the bowl and mix gently until combined.

Be careful not to over-knead; doing so can make the baked crust tough.

Step 3

Chill the Dough

Shape the dough into a ball, wrap it in plastic wrap, and place it in the refrigerator for a minimum of 3 hours or overnight.

If the dough is not coming together well, you may need to add a little extra flour.

Step 4

Roll Out the Dough

After chilling, roll the dough out between two sheets of parchment paper into a circle approximately 30-35 cm (12-14 inches) in diameter.

Step 5

Prepare the Peaches

Slice the peaches into wedges and set aside for filling.

Step 6

Assemble the Galette

Place the peach slices in the center of the dough circle, leaving a 4-6 cm (1.5-2.5 inches) border.

Fold the edges of the dough over the peaches, overlapping it as you go.

Step 7

Brush the Galette

In a bowl, whisk together the second egg and cream and brush this mixture over the folded edges of the galette.

Step 8

Add Sugar and Butter

Sprinkle brown sugar over the galette and dot the top with some extra butter pieces to enhance its richness.
