Ingredients
Pancake Batter
Instructions
Step 1
In a mixing bowl, whisk the eggs with the sugar and salt until well combined. Gradually add a bit of the milk while continuing to whisk.
Next, sift in the flour and add the baking soda. Mix well to remove any lumps, then pour in the remaining milk.
Step 2
Use a blender or mixer to blend the batter until it is smooth and free of clumps. Once blended, add the vegetable oil and mix again.
If your batter seems too thick, gradually add the room temperature water until you reach your desired consistency. (I usually add 150 milliliters or about 0.6 cups.)
Step 3
Heat a non-stick skillet over medium heat. It's a good idea to lightly grease the pan with vegetable oil before each pancake.
Using a ladle, pour about 3/4 of a large ladle of the batter onto the hot skillet, spreading it evenly across the surface. Cook until bubbles form and the edges look set.
Step 4
Carefully flip the pancake using a spatula or your hands. Cook for an additional minute or so until golden brown. Repeat this process with the remaining batter.
These pancakes can be served with a variety of toppings, such as caviar, salted salmon, sour cream, honey, or jam. Feel free to get creative with fillings like cottage cheese, liver with onions, mushrooms, or minced meat. Enjoy your meal!
Servings
Serve these fluffy pancakes warm with a selection of mouth-watering toppings! From sweet to savory, there's something for everyone! 😍
Try going classic with maple syrup and a dollop of whipped cream, or indulge with fresh fruits like strawberries and bananas. For a savory twist, consider serving them with caviar or smoked salmon, making for an elegant brunch surprise. 🥞✨
Feeling experimental? Roll them up with your favorite fillings, such as sweet ricotta or even a mix of mushrooms and ground meat. The possibilities are endless, and your creativity is the limit!
Equipment
A good non-stick skillet is essential for perfectly golden pancakes. Make sure it’s heated properly before adding the batter to prevent sticking!

Faq
- What do I do if my pancake batter is too thick?
Add a splash of room temperature water to thin it out until you reach your desired consistency.
- How do I avoid uneven pancakes?
Make sure your skillet is evenly heated and pour the batter in one steady motion, using the ladle for consistency.
- Can I freeze leftover pancakes?
Absolutely! Let them cool, stack them with parchment paper in between, and store in a freezer bag. Reheat them in the toaster or microwave!
- What should I do to make my pancakes fluffier?
Make sure to not overmix your batter. A few lumps are fine; they'll combine as they cook!
- Can I add flavorings to the batter?
Yes! Adding vanilla extract or a sprinkle of cinnamon can elevate the flavor of your pancakes.
- How can I make perfect-sized pancakes?
Use a ladle to pour the batter onto the skillet—it allows for consistent sizes every time.
