Start by crushing the 150 grams of digestive biscuits until they resemble fine crumbs. In a mixing bowl, combine the biscuit crumbs with 50 grams of softened unsalted butter.
Mix well until the crumbs are fully coated with butter. Line the bottom of a 18-20 cm (7-8 inch) springform pan with parchment paper and grease the sides with butter. Press the biscuit mixture into the bottom of the pan to form an even crust.

Place the prepared crust in the refrigerator while you prepare the cheesecake filling. This will help it set and maintain its shape while baking.
Step 3
Ensure that the cream cheese, heavy cream, and egg are at room temperature.
In a mixing bowl, blend 400 grams of cream cheese with 120 grams of granulated sugar until smooth. Add in the large egg and mix until combined. Gradually pour in the 120 grams of heavy cream and continue mixing. Finally, add 30 grams of cornstarch and a splash of vanilla extract, mixing gently. Remember to avoid whipping the mixture; just combine until smooth.
Step 4
Preheat your oven to 150 degrees Celsius (300 degrees Fahrenheit). Pour the cheesecake filling over the chilled crust, smoothing the top evenly with a spatula.
Place the cheesecake in the oven and bake for about 1 hour. When the time is up, turn off the oven and slightly crack the door to let the cheesecake cool gradually.
Step 5
After 15 minutes, carefully remove the cheesecake from the oven and allow it to cool to room temperature. Then transfer it to the refrigerator for at least 10-12 hours to fully set.

To make the ganache, combine 150 grams of white chocolate with 50 grams of hot heavy cream. Stir until the chocolate is fully melted and smooth. Add a few drops of green food coloring to achieve your desired shade.
Let the ganache cool and then refrigerate for 8-10 hours to firm up.
