Whip until you reach firm, stable peaks. Then, add 1 teaspoon of lemon juice and whip again until fully combined.
Finally, gently fold in 15 grams of cornstarch at the lowest speed until just combined.
Transfer the meringue into a piping bag fitted with a star tip and pipe onto parchment paper in the shape of a six-pointed snowflake.
Step 2
Bake the meringue in the oven at a low temperature of 80-90 degrees Celsius (approximately 176-194 degrees Fahrenheit) for about 90 minutes.
After this time, leave the oven door ajar to let the meringue cool down. This helps keep it crisp and prevents cracking.
Step 3
While the meringue cools, whip 500 ml of heavy cream until soft peaks form.
Next, add in 250 grams of cream cheese and continue to whip until you achieve firm peaks.
