Instructions
Step 1
In a large mixing bowl, combine the **flour**, **sugar**, and **salt**. Make a well in the center and add the **yeast**, **warm milk**, and **eggs**. Mix until the dough starts to come together.
Next, add the **softened butter**, **vanilla extract**, and **orange and lemon zests**. Knead the dough for about 10 minutes until it becomes smooth and elastic.
Step 2
Shape the dough into a ball and place it in a greased bowl. Cover it with a damp cloth and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
Step 3
Once the dough has risen, gently punch it down and transfer it to a lightly floured surface. Roll the dough into a long rope about 2 cm (1 inch) thick. Form a ring by connecting the ends and place it on a baking tray lined with parchment paper.
Let the ring rise for another 30-45 minutes.
Step 4
Preheat your oven to 180°C (350°F). Before baking, brush the top of the dough with an egg wash (1 egg mixed with a tablespoon of milk) and decorate with the **candied fruit** and **blanched almonds**.
Bake for 20-25 minutes or until the Roscón is golden brown. Let it cool on a wire rack.
Step 5
When serving, cut the Roscón into slices and hide the **figurine** and the **bean** inside. Traditionally, whoever finds the figurine is crowned king for the day, while the person who finds the bean has to buy next year's Roscón!
