Step 1
In the mixing bowl of your Kenwood Cooking Chef XL, add the apple puree and lemon puree. Set the mixer to the minimum speed and begin to heat the mixture, targeting a temperature of 105°C (221°F).
While the mixture is heating, combine the sugar, pectin, and agar agar in a separate bowl, stirring them together thoroughly.
Step 2
Once the mixture is heated to around 40°C (104°F), gradually incorporate the sugar mixture while mixing continuously. Keep an eye on the temperature as it rises.
When you notice the first signs of bubbling, pour in the water mixed with citric acid and the glucose syrup.
Step 3
Allow the mixture to cook, stirring regularly, until it reaches 105°C (221°F). The cooking process takes approximately 30 to 40 minutes.
You should aim for a slightly thickened consistency at this point.
Step 4
Pour the hot marmalade into a 15cm x 15cm (6in x 6in) mold and let it cool at room temperature for about 10 to 12 hours.
After the set time, carefully remove the marmalade from the mold and slice it into small squares.
Step 5
Coat the pieces in sugar before serving, and enjoy your delightful homemade apple lemon marmalade!
