Instructions

Step 1

Prepare the Mixture

In the mixing bowl of your Kenwood Cooking Chef XL, add the apple puree and lemon puree. Set the mixer to the minimum speed and begin to heat the mixture, targeting a temperature of 105°C (221°F).

While the mixture is heating, combine the sugar, pectin, and agar agar in a separate bowl, stirring them together thoroughly.

Step 2

Add Sweeteners

Once the mixture is heated to around 40°C (104°F), gradually incorporate the sugar mixture while mixing continuously. Keep an eye on the temperature as it rises.

When you notice the first signs of bubbling, pour in the water mixed with citric acid and the glucose syrup.

Step 3

Cook the Marmalade

Allow the mixture to cook, stirring regularly, until it reaches 105°C (221°F). The cooking process takes approximately 30 to 40 minutes.

You should aim for a slightly thickened consistency at this point.

Step 4

Set and Cut

Pour the hot marmalade into a 15cm x 15cm (6in x 6in) mold and let it cool at room temperature for about 10 to 12 hours.

After the set time, carefully remove the marmalade from the mold and slice it into small squares.

Step 5

Coat the pieces in sugar before serving, and enjoy your delightful homemade apple lemon marmalade!

Faq

  • Can I use other fruits instead of apples for the marmalade?

Absolutely! Feel free to experiment with other fruits like pears or peaches. Just make sure to adjust the sugar accordingly to balance the flavors.

If your marmalade is too runny, it may not have cooked long enough or could need more pectin. Make sure to follow the cooking times closely.

  • What's the best way to store the marmalade?

Store your marmalade in airtight jars in the refrigerator for up to a month. For longer storage, consider canning your marmalade!

  • Can I double the recipe?

Yes, but ensure your mixer can handle the increased volume. You may need to adjust cooking times based on the increased quantity.

  • What is the ideal temperature to reach for the perfect texture?

The ideal temperature for a thick marmalade is around 105°C. Using a thermometer helps you achieve the perfect consistency!

  • Can I add spices to enhance the flavor?

Definitely! Adding a pinch of cinnamon or ginger can give your marmalade an exciting twist. Just remember to keep the balance of flavors!
