Instructions
Step 1
Start with the Refreshing Smoothie Mochi filling. In a bowl, mix 1 cup of banana cream, 1 cup of grapefruit segments, and 1 cup of diced strawberries until well blended.
Next, for the Dubai Mochi filling, combine 1 cup of chocolate cream with 1 cup of Danube filling. Ensure they are mixed thoroughly and set both filling mixtures aside to cool.
Step 2
In a large mixing bowl, combine 4 cups of mochiko (sweet rice flour) and 1 cup of sugar.
Add 4 cups of water gradually, stirring continuously until you achieve a smooth batter. Make sure there are no lumps left.
Transfer the batter to a steaming dish lined with parchment paper and steam for about 30 minutes or until the dough becomes translucent and slightly sticky.
Step 3
Once the dough is ready, dust a flat surface with cornstarch to prevent sticking. Take a portion of the mochi dough and flatten it into a circle with your hands or with a rolling pin.
Place about a tablespoon of your cooling filling in the center of the dough, then fold the edges over to enclose the filling completely. Pinch the edges to seal the mochi well.
Repeat this process until you use all the dough and fillings. Dust the completed mochi with more cornstarch to keep them from sticking together.
Servings
✨ When serving your freshly made mochi, consider creating an eye-catching platter! Use a variety of fillings, like the refreshing smoothie with banana cream and grapefruit-strawberry center and the luxurious chocolate cream with a Dunai twist. Layer them artistically on a large plate, and garnish with fresh fruits or edible flowers for that extra flair! 🥝🍓
🍡 For a fun touch, create mochi gift boxes for friends and family. Fill small boxes with assorted mochi flavors, and add a personalized note. It’s a sweet surprise for any celebration! 🎁
🎉 Pair mochi with different dips such as chocolate sauce or fruit puree. This will create a delightful experience of flavors that everyone will love. Get creative and make it a mochi party! Your guests will be coming back for more!
Equipment
Use a set of mixing bowls to combine your ingredients. Having different sizes can be helpful for various steps.
This will prevent your mochi from sticking. Always keep it dusted with cornstarch to ensure easy release.

Variations
🌱 Gluten-Free and Vegan Variations: You can easily adapt this recipe to fit a gluten-free or vegan lifestyle! Replace traditional glutinous rice flour with a gluten-free alternative, such as sweet rice flour, which provides the same chewy texture.
🥥 For the vegan fillings, use plant-based creams or fruits blended with coconut cream for a rich filling. You can also make a coconut mochi by mixing in some coconut milk into the dough for an exotic twist!
🧄 Don't forget to dust your mochi with powdered sugar or cornstarch to prevent sticking, especially when using alternative flours!

You can use a microwave by covering the mochi mixture in a microwave-safe bowl and cooking it in short bursts while keeping it covered with plastic wrap.
- How can I store my mochi to keep it fresh?
Store mochi in an airtight container in the fridge for up to a week. Dust with cornstarch to minimize sticking.
