Step 1
In a large bowl, combine the ground beef with 1 egg, finely chopped onions, minced garlic, salt, and pepper.
Mix everything thoroughly until well incorporated and set aside.
Step 2
Grate the hard cheese, such as Parmesan, using a fine grater.
Include it in the meat mixture, combining it well to ensure an even distribution of flavor.
Step 3
Shape the meat mixture into small balls, about the size of a golf ball.
Place breadcrumbs on a plate and roll the meatballs in the breadcrumbs until they are evenly coated.
Step 4
Peel and finely chop the second onion.
Heat the olive oil in a skillet over medium heat and add the onions. Sauté until they turn a golden color, which should take about 5-7 minutes.
Step 5
Add the canned tomatoes to the skillet with the sautéed onions. Season with salt and pepper and stir well.
Allow the tomato mixture to heat through and then add bay leaves. Let it simmer for a couple of minutes, then remove the bay leaves.
Step 6
Pour the tomato sauce into a baking dish and carefully place the meatballs on top of the sauce.
Cover the dish tightly with aluminum foil and bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for 30 minutes.
Step 7
Once cooked, take out the meatballs and sprinkle them with chopped fresh parsley.
