Instructions
Step 1
Heat the heavy cream and coffee until it comes to a boil.
Combine the hot cream with the white chocolate. Stir until smooth.
Add the lemon juice and mix well.
Cover the ganache with plastic wrap and refrigerate for 5-6 hours.
Step 2
In a mixer, combine the room temperature butter with both types of sugar and lemon zest. Mix until smooth and creamy.
Add the egg and mix until combined.
In a separate bowl, combine the flour and baking powder. Gradually add this to the butter mixture to form a dough.
Fold in the white chocolate chunks.
Form the dough into balls of about 70 grams (2.5 ounces) each and slightly flatten them. Keep in mind that they will spread a bit in the oven.
Step 3
Preheat the oven to 180°C (350°F).
Bake the cookies for about 15 minutes, or until they are golden brown.
Step 4
Allow the cookies to cool for about 10 minutes.
Fill them with the prepared ganache.
Top with additional ganache and decorate as desired.

Equipment
Use a medium-sized mixing bowl for combining your ingredients. A stainless steel bowl is often easier to clean.
A mixer will make creaming the butter and sugar much more manageable and give you a smooth texture.
Make sure it’s non-stick or lined with parchment paper to ensure your cookies come off easily after baking.
This will allow your cookies to cool evenly and prevent them from getting soggy.
For heating up the cream and coffee mixture for the ganache.
Perfect for mixing and scraping down the sides of the bowl.
