In a saucepan, combine 70 grams of heavy cream with the torn mint leaves and lemon zest. Heat the mixture until it reaches 80 degrees Celsius (176 degrees Fahrenheit) and let it steep for 4 hours.
Strain the infused cream to remove the mint leaves and lemon zest.
Step 2
Bring the strained cream to a boil and pour it over 100 grams of white chocolate. Add a splash of vanilla extract.
Using a blender, blend the mixture until smooth and homogeneous.
Step 3
While blending, gradually add the 40 grams of cold heavy cream in a thin stream. Continue to blend until the ganache is smooth and creamy.
If desired, you can add yellow food coloring at this stage to achieve your preferred hue.
Step 4
Cover the ganache tightly with plastic wrap, ensuring it touches the surface to prevent a skin from forming. Place it in the refrigerator for 8 hours.
After chilling, whip the ganache until it becomes light and airy, almost doubled in volume.
Step 5
This delightful mint ganache is perfect as a filling for cakes, pastries, macarons, or trifles.
