Instructions
Step 1
If using fresh mushrooms, sauté them in a pan without oil or with a small amount of vegetable oil until they are golden brown and all liquid has evaporated. Let them cool before proceeding.
If using pickled mushrooms, remove them from the jar and gently pat them dry with a paper towel to remove excess marinade.
Step 2
Dice the cooked chicken breast into small cubes. This will ensure it mixes well with the other ingredients.
Cut the pickled cucumbers into small cubes as well. You can sprinkle a little salt here, but be cautious as they may already be salty.
Grate the boiled potatoes, carrots, and hard-boiled eggs on a medium or coarse grater. This helps to create a nice texture in the salad.
Lastly, finely chop the dill and green onions to add freshness to the salad.
Step 3
Using a springform pan or a deep bowl, start layering your salad. Begin with the mushrooms, placing them cap-side down to create a beautiful 'meadow' effect on top.
Next, sprinkle the chopped green onions and dill evenly over the mushrooms, creating a thin layer for added flavor.
Follow with the grated potatoes, pressing it down gently. Add a pinch of salt and a thin layer of mayonnaise on top.
Layer the diced pickled cucumbers next, spreading them evenly. Again, if desired, you can add a light touch of mayonnaise.
Next is the layer of grated eggs, followed by another layer of mayonnaise and a sprinkle of salt.
For the carrot layer, repeat the process with mayonnaise, ensuring it is spread evenly.
Finally, add the diced chicken, smoothing it out nicely. Top it with a final layer of mayonnaise, and finish with a layer of grated cheese. A light smear of mayonnaise can help the cheese adhere better.
Step 4
Cover the salad with plastic wrap and refrigerate for 2-3 hours. This chilling time helps all the layers to blend and set.
After chilling, carefully remove the springform pan if used. Turn the salad onto a flat serving plate so that the mushrooms are on top, creating the effect of a real mushroom glade.
