Instructions
Step 1
Begin by rinsing your dried fruits thoroughly to remove any preservatives. Next, zest the oranges and squeeze their juice into a bowl. If you're using cognac, feel free to add it at this stage. Combine the orange zest, juice, and cognac with the dried fruits. Cover the mixture and let it sit for a few hours. For best results, you can soak the dried fruits overnight.
Step 2
For best results, make sure all your ingredients are at room temperature. In a mixing bowl, combine the softened butter with a pinch of salt, sugar, eggs, and your spices. Beat the mixture thoroughly with a mixer. Once well combined, add the cottage cheese that has been blended until smooth or pushed through a sieve.
Next, stir in the baking powder and half of the flour using a spatula. Gradually add the remaining flour while mixing until you have a uniform dough. Finally, fold in the soaked dried fruits and chopped roasted nuts. Your dough is now ready!
Step 3
Instead of the traditional stollen shape, I prefer to make mini versions. Divide the dough into four equal parts and place them in a baking pan to mold. Once shaped, extract each piece and form small logs or 'mini-stollen'. Transfer the formed logs to a baking tray lined with parchment paper.
Bake the mini-stollens in a preheated oven at 180°C (350°F) for about 30 minutes or until golden brown.
Step 4
As soon as the stollen comes out of the oven, brush it generously with the melted butter. Immediately sprinkle powdered sugar on top while still warm for best adherence. Wrap each stollen in parchment paper and place them in the refrigerator. They can be stored for several days, allowing them to soak in flavors and soften up beautifully.
Servings
Equipment
A sturdy mixing bowl is essential for combining your ingredients. Choose one that’s large enough to hold all your dough without overflowing.
This will help you whip the butter and sugar together quickly. If you don’t have one, a whisk and some elbow grease will do just fine!
Your oven needs to be well-calibrated for even baking. Preheat it to 180°C (350°F) to ensure your stollen bakes perfectly.
Use a baking sheet lined with parchment paper for easy cleanup and to prevent sticking. This will help your stollen brown nicely!
Variations
Faq
- How do I know when my stollen is baked?
You can tell it’s done when it’s golden brown and a toothpick inserted in the center comes out clean. Keep an eye on it in the last few minutes of baking!
- Can I use other fruits or nuts in the recipe?
Absolutely! Feel free to get creative with your favorite dried fruits or nuts. Just keep the total quantity the same for the best results.
- What should I do if my dough is too sticky?
If your dough feels sticky, sprinkle a little more flour into the bowl until you achieve a workable consistency. Be careful not to add too much, or it might get tough!
- How long can I store the stollen?
Wrapped in parchment paper and stored in the fridge, your stollen can last up to two weeks. The flavors will meld together beautifully over time!
- Can I freeze the stollen?
Yes! Wrap it tightly in plastic wrap and then aluminum foil to prevent freezer burn. It will stay fresh for up to three months; just thaw it overnight in the fridge before serving.
- How can I enhance the flavor of my stollen?
Incorporating a splash of almond extract or a bit of citrus zest can elevate the flavor profile. Experiment with spices like nutmeg for added warmth!
