Once the mixture is hot, add the baking soda and wait for the reaction, which will cause the mixture to lighten and expand in volume. Remove the saucepan from the heat.

Let the mixture cool down to about 60°C (140°F) before adding the egg. Mix well until fully combined.

Step 2

Incorporate Dry Ingredients

Add the all-purpose flour and rye flour along with the spices to the warm mixture.

Knead everything together until you achieve a smooth, pliable dough. If the dough is too sticky, feel free to add a little more flour.

Step 3

Chill the Dough

Roll out the dough to a thickness of about 0.5 centimeters (0.2 inches).

Place it in the refrigerator for about 30-40 minutes. You can chill it longer if desired, which will help with cutting.

Step 4

Cut and Bake the Cookies

Preheat your oven to 150-160°C (300-320°F).

Use cookie cutters to cut out shapes from the chilled dough and place them on a baking sheet lined with parchment paper.
