Instructions
Step 1
First, make sure to chill the kefir before you start. Next, boil the beets and eggs until fully cooked. Allow them to cool before handling.
Step 2
Once the eggs are cool, separate the egg whites from the yolks. In a large pot, finely chop all the herbs like dill and green onions.
Add the yolks and mix in the hot mustard, mashing everything together with a fork until you create a smooth consistency.
Step 3
Using a large grater, immediately grate the cooked beets into the mixture with yolks and herbs, which helps achieve a vibrant color.
Next, grate the egg whites as well and add them to the pot.
Step 4
Now, shred the cucumbers into thin strips and fold them into the mixture. Season with salt to taste, then add sugar, and finally fold in the sour cream.
Pour in the chilled kefir and add lemon juice. Mix thoroughly until well combined.
Step 5
Gradually add water to the mixture, adjusting to your preferred consistency whether you like it thicker or thinner. I used around 900-1000 ml of water (can be regular or a mix with sparkling water).
Step 6
Give everything a final stir, check the salt, and then refrigerate for 2-4 hours to allow the flavors to meld together. Serve with extra mustard on the side for an added kick!

A reliable grater is key for shredding beets and cucumbers. Choose a coarse grater for the perfect texture.

A large mixing bowl will help you combine all the ingredients smoothly before chilling.

To thoroughly mix the egg yolks and mustard with the herbs, a whisk or a fork will do the job perfectly.
Accurate measurements ensure the right balance of flavors in your soup.

Variations
Faq
- What is the best way to peel beets?
It’s easiest to roast them whole, then peel the skin off after cooking when they are cool enough to handle! Alternatively, you can peel them before boiling, but be aware that some of the color will bleed into the water.
- How can I store leftover soup?
Store any leftover soup in an airtight container in the refrigerator for up to 3 days. Just give it a good stir before serving again, as the ingredients may settle.
- Can I add other vegetables to this beet soup?
Absolutely! Feel free to get creative. Adding finely diced bell peppers or even cooked potatoes can add a unique twist to the flavor!
- How do I adjust the thickness of the soup?
Simply add more water to thin it out or reduce the liquid to make it thicker. It's all about finding your perfect consistency!
- What's the best way to grind herbs like dill?
Chop them finely with a knife or use a food processor for quick preparation. Fresh herbs elevate the dish significantly.
- Can this soup be frozen for later use?
While it is best served fresh, if you choose to freeze it, make sure it is in a freezer-safe container. Be aware that the texture may change slightly upon thawing.
