Instructions
Step 1
In a mixing bowl, combine sifted flour, cottage cheese, and chilled butter cut into pieces.
Quickly mix by hand until the chunks of butter are dissolved. Add 1 egg and salt, then gently stir the mixture. Remember, do not knead the dough for too long, or it will become tough during baking.
Step 2
Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 3 hours or overnight.
If the dough does not come together well, you may add a little more flour.
Step 3
Once the dough has chilled, roll it out between two sheets of parchment paper into a circle about 30-35 centimeters (12-14 inches) in diameter.
Step 4
Spread cottage cheese in the center of the dough, leaving about 4-6 centimeters (1.6-2.4 inches) of edges.
Lay the thinly sliced vegetables on top of the cottage cheese.
Fold the edges of the dough over to create a rustic border.
Step 5
In a small bowl, whisk together the remaining egg and cream.
Use a brush to glaze the edges of the galette with the egg wash.
Drizzle a small amount of olive oil over the vegetables for extra flavor.
Step 6
Preheat your oven to 175°C (350°F).
Bake the galette for 20 to 25 minutes, or until it is golden brown.
Step 7
Once baked, allow the galette to cool slightly before slicing. Serve warm and enjoy your savory cottage cheese galette with vegetables!
