Step 1
Begin by cleaning the mushrooms and onion. Chop them into small cubes.
Next, rinse the greens thoroughly and dry them. Finely chop the greens to add fresh flavor to the dish.

In a dry pan, sauté the mushrooms until all moisture evaporates. This step is crucial as it enhances the flavor of the mushrooms.
Once the moisture is gone, add the ghee (or any oil of your choice) and chopped onions. Cook together until the onions are soft and slightly golden. After cooking, turn off the heat and let it cool.

In a blender, combine the cottage cheese, eggs, and kefir. Blend until you achieve a smooth mixture.
To this mixture, add the sautéed mushrooms and onions, chopped greens, salt, and black pepper to taste. Stir well to combine all the ingredients evenly.

Take a baking dish and grease it with a little ghee.
Layer the lavash bread in the dish, folding it in an accordion style, to create texture.

Pour the prepared filling over the layered lavash, ensuring it seeps into the folds. This will help distribute the flavor throughout the casserole.

Preheat your oven to 180°C (350°F). Bake the casserole for 45 minutes uncovered.
After this time, cover the dish with foil and continue baking for an additional 15 minutes. This method ensures a nice golden color without over drying.
Step 7
Once baked, turn off the oven and remove the foil. Leave the casserole to cool inside the oven with the door slightly ajar. This will help the casserole set properly.
It can be enjoyed warm or cold, and it will be delicious no matter how you serve it!
