Step 1
Start by blending the strawberries in a blender until smooth. Transfer the blended strawberries into a saucepan.
Add the sugar and bring to a boil over medium heat. Once boiling, stir in the cornstarch and cook for an additional two minutes until the mixture thickens. Remove from heat and allow to cool.
Step 2
Lightly roll out the puff pastry on a floured surface, and then cut it into your desired shape, ensuring you create a border. Place the pastry on a baking sheet.
Brush the border of the pastry with the egg yolk for a golden finish. Bake in a preheated oven at 200 degrees Celsius (400 degrees Fahrenheit) for 15 minutes or until the pastries turn golden brown.
Step 3
While the pastries are baking, mix the cream cheese and powdered sugar together in a bowl until smooth and creamy.
If desired, you can add a few drops of food coloring or some vanilla paste for additional flavor.
Step 4
Once the pastries are done baking, remove them from the oven and carefully press down the center to create space for filling. Allow them to cool completely.
Spread a layer of the cool strawberry jam over the center and then add the cream cheese mixture on top. Feel free to garnish with additional berries if desired.
