Instructions
Step 1
In a large mixing bowl, combine the gluten-free flour, corn starch, nut flour, baking powder, and zero-calorie sweetener.
Mix well to ensure all dry ingredients are evenly distributed.
Step 2
In a separate bowl, mix the chicory syrup with the melted coconut oil.
Pour this mixture into the bowl with the dry ingredients.
Mix until it forms a crumbly dough.
Step 3
Gradually add the warm milk to the dough mixture.
Mix until the dough becomes smooth and uniform.
Step 4
Transfer the dough onto a sheet of parchment paper and roll it out to a thickness of about 4mm (0.15 inches).
Place the rolled dough in the refrigerator for 30 minutes to chill.
Step 5
Preheat your oven to 160°C (320°F).
Remove the chilled dough from the refrigerator and cut it into desired shapes.
Transfer the cookies to a perforated silicone baking mat or a parchment-lined baking sheet.
Step 6
Bake the cookies in the preheated oven until they turn a light golden color, approximately 5-6 minutes. Note: Baking time may vary depending on your oven.
Remove the cookies from the oven and let them cool.

Variations
✅ Gluten-Free Variation: Luckily, the original recipe calls for gluten-free flour, which makes this part easy! Just make sure all your other ingredients, such as cornstarch and baking powder, are also certified gluten-free.
✅ Vegan Variation: To make these cookies completely vegan, simply substitute the cow’s milk with your favorite plant-based milk. Almond, oat, or soy milk all work wonderfully. And there you go – delicious vegan cookies! 🥛
Faq
- What if I don't have gluten-free flour?
You can use almond flour or oat flour as a substitute, but make sure it’s finely ground to get the right texture.
- Can I use a different type of syrup instead of chicory syrup?
Yes, you can use maple syrup or agave syrup. Just be aware that different syrups have different sweetness levels, so you might need to adjust the quantity accordingly.
- How do I know if my cookies are properly baked?
Your cookies should be a light golden color. If they're too dark, they might be overdone. Keep a close eye on them until you know your oven’s exact timing.
- Can I add chocolate chips or dried fruit?
Absolutely! Adding chocolate chips or dried fruit like cranberries or raisins can give the cookies an extra flavor boost and delightful texture.
- What's the best way to store these cookies?
Store the cookies in an airtight container at room temperature for up to a week. For longer storage, you can freeze them and then thaw as needed.
- Can I double this recipe?
Yes, you can double or even triple the recipe. Just make sure you have enough baking sheets and oven space!
