Instructions
Step 1
In a mixing bowl, combine the shredded coconut, almond flour, coconut syrup, coconut milk, and melted coconut oil.
Mix until the ingredients are well integrated, and the mixture can easily be molded into balls. If the mixture is too dry, add a little more milk until it reaches the desired consistency.
Step 2
Line a 14 cm (5.5 inches) square baking dish with parchment paper. Transfer the coconut mixture into the dish and press it down firmly to create an even layer at the bottom.
Once shaped, place the dish in the freezer for about 20 minutes to firm up the coconut layer.
Step 3
While the coconut layer sets, take your frozen mango and blend it with the orange juice and pineapple if you opt to add it, until smooth. Transfer the mixture to a saucepan.
Add the agar-agar to the saucepan and stir continuously over medium heat until it reaches a boil. Allow it to boil for one minute, then remove from heat.
Carefully pour the mango mixture over the set coconut layer once it has cooled slightly.
Step 4
After pouring the mango layer, wait for it to cool completely before moving it to the refrigerator. Chill for at least 4 hours to allow the layers to set properly.
Once set, remove from the dish and cut into squares. For an extra touch, you can dip these treats in melted chocolate before serving.
