Step 1
Start by beating 2 large eggs with 85 grams (3 ounces) sugar until you achieve a dense mixture, which should take about 8 to 10 minutes.
Next, sift together 80 grams (3 ounces) all-purpose flour and ½ teaspoon baking powder. Gently fold this dry mixture into the egg and sugar mixture.
Finally, slowly stir in 2 tablespoons of boiling water. Pour this batter into a pre-greased cake pan and bake at 160°C (320°F) for approximately 25 to 30 minutes. Once baked, let it cool completely.
Step 2
Heat 100 grams (3.5 ounces) strawberries in a saucepan until warm. In a small bowl, combine 15 grams (0.5 ounces) sugar with 2 grams (0.1 ounces) pectin NH.
Add the sugar-pectin mix to the warmed strawberries, bring to a boil, and cook for about 2 to 3 minutes. Stir in 1 teaspoon of lemon juice before allowing the mixture to cool completely.
Step 3
Pour 50 grams (1.8 ounces) hot cream over 50 grams (1.8 ounces) dark chocolate and stir until the chocolate is completely melted. Let this mixture cool for about 3 hours.
Once cooled, whip the mixture adding 30 grams (1 ounce) cold cream while blending until you achieve a light fluffy texture.
Step 4
In a mixing bowl, combine 400 grams (14 ounces) cream cheese, 70 grams (2.5 ounces) powdered sugar, and 200 grams (7 ounces) cream (33%-35%).
Using a mixer, blend these ingredients together until the mixture is smooth and well-combined.
Step 5
In a small bowl, combine 100 ml (3.4 fluid ounces) milk with 20 ml (0.7 fluid ounces) Baileys. This will add moisture and flavor to the layers of your cake.
