Step 2
In a large bowl, cream together 50 grams of unsalted butter and 100 grams of powdered sugar until light and fluffy. Add 2 large eggs one at a time, mixing well after each addition.
In another bowl, whisk together 150 grams of all-purpose flour and 1 teaspoon of baking powder. Gradually add this to the wet mixture, stirring until just combined. Finally, add 1 teaspoon of vanilla extract and mix until smooth.
Step 3
Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper. Using a cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove from the oven and allow them to cool for a few minutes before transferring to a wire rack.
Step 4
Once the cookies have cooled, take the coffee marshmallow mixture from the fridge and whip it until fluffy. Spread a generous layer of this marshmallow on half of the cookies, then top with the remaining cookies to make sandwiches.
