Step 1
In a mixing bowl, whisk 3 large eggs with 120 grams (1/2 cup) sugar for about 10 minutes until the mixture triples in volume.
Sift together 110 grams (1 cup) all-purpose flour, 15 grams (2 tablespoons) cocoa powder, and 10 grams (2 teaspoons) baking powder.
In another bowl, combine 65 grams (1/4 cup) milk, 45 grams (3 tablespoons) vegetable oil, and 2 tablespoons red food coloring. Mix until smooth.
Gradually add the milk mixture to the egg mixture and gently fold with a silicone spatula until fully combined.
In three stages, incorporate the sifted dry ingredients into the wet mixture, folding gently from top to bottom. Pour the batter into a prepared baking pan.
Bake at 165-170°C (329-338°F) for 35-40 minutes. Check doneness with a toothpick – it should come out clean.
Once baked, immediately invert the sponge onto a wire rack to cool completely.
Step 2
In a saucepan, combine 100 grams (3.5 ounces) cherries and 50 grams (1/4 cup) sugar. Bring to a boil and then puree with a blender until smooth.
Dissolve 10 grams (1 tablespoon) cornstarch in 20 grams (1 tablespoon) water and pour this into the cherry mixture, stirring continuously until it thickens.
Prepare the gelatin by mixing 2 grams (1/2 teaspoon) gelatin with 12 grams (1 tablespoon) water and follow the package instructions. Stir it into the cherry sauce and mix well.
Step 3
In a saucepan, heat 70 grams (2.5 ounces) cherries with 35 grams (3 tablespoons) sugar until boiling, then remove from heat and blend until pureed.
Prepare gelatin in the same manner as before with 3 grams (1 teaspoon) gelatin and 18 grams (1.5 tablespoons) water. Mix the gelatin into the cherry puree until well combined.
Whip 150 grams (2/3 cup) heavy cream and 70 grams (2.5 ounces) cream cheese together until fluffy, about 2-3 minutes. Fold in the cherry mixture and whip for another minute, until combined.
Step 4
In a mixing bowl, combine 400 grams (14 ounces) cream cheese, 200 grams (7 ounces) heavy cream, and 70 grams (1/3 cup) sugar. Beat with a mixer on medium speed until mixture is smooth and creamy.
Step 5
Once the cake is completely cool, slice it horizontally if desired. Layer the cherry mousse and cream cheese frosting in between the cake layers. Top with the cherry sauce and any additional decorations as preferred.
