Once piped, tap the baking sheets on the counter to remove excess air bubbles. Let the macaron shells sit at room temperature for about 30 minutes until a skin forms on the surface.

Preheat your oven to 150°C (300°F). Bake the macarons in the preheated oven for about 15-20 minutes. Make sure they do not brown; they should remain pale green. Once baked, allow them to cool completely on the sheets before removing them.

While the macaron shells are cooling, prepare the filling. In a bowl, beat the softened butter until creamy, then gradually add the powdered sugar until incorporated. Add the heavy cream and mix until the filling is fluffy.

Once the macaron shells are completely cool, pair them up by size. Fill a piping bag with the buttercream filling and pipe a small dollop onto the flat side of one shell, then gently press the other shell on top to create a sandwich.
