Instructions
Step 1
Start by washing and peeling the apples. Cut them into small pieces and place them in a saucepan. Add the water to the saucepan.
Heat the saucepan over medium heat until the apples are soft. This should take about 10 minutes. Stir occasionally to prevent sticking.
Once softened, mash the apples with a fork or blend them until you achieve a smooth puree. Set this aside to cool.
Step 2
In a small bowl, soak the gelatin in a few tablespoons of cold water for about 5 minutes. This will allow it to bloom.
In a medium saucepan, combine the sugar and apple juice over low heat. Stir until the sugar has completely dissolved, then increase the heat and bring to a boil. Allow it to boil for about 5 minutes or until it reaches a thick syrup consistency.
Remove from heat and add the bloomed gelatin, stirring until fully dissolved. Let it cool for a few minutes.
Step 3
In a large mixing bowl, whip the egg whites until they form stiff peaks. This should take about 5 minutes with a stand mixer or handheld mixer.
Gradually pour the cooled sugar mixture into the whipped egg whites while continuing to beat on high speed. Beat for an additional 5-10 minutes until the mixture is glossy and holds its shape.
Gently fold in the prepared apple puree until well combined. Be careful not to deflate the mixture.
Step 4
Line a baking dish or a tray with parchment paper. Pour the marshmallow mixture into the prepared dish and spread it out evenly.
Let it set at room temperature for at least 4 hours, or overnight if possible. Once set, cut it into squares or shapes as desired.
