Instructions
Step 1
First, *soak the gelatin* according to the instructions on your packaging. This will allow it to dissolve properly when mixed into your berry blend.
While the gelatin is soaking, *warm the coconut milk* slightly in a saucepan or microwave until it’s just warm to the touch, but not boiling.
Step 2
In a blender, combine the *frozen berries*, *warmed coconut milk*, and *sweetener* of your choice. Blend until you achieve a smooth consistency.
After the berries are blended well, *add the soaked gelatin* to the mixture and blend again briefly to incorporate it evenly.
Step 3
Once the mixture is well combined, *pour the berry mixture* into your desired molds. You can choose silicone molds or any small cups or glasses for serving.
After filling the molds, *place them in the refrigerator* and let them chill overnight to set completely.
Step 4
The next morning, *remove the soufflés from molds* carefully. If they stick, you can run a knife around the edges to loosen them.
Serve your light, healthy dessert by *decorating with seasonal berries* on top. Enjoy your delicious and nutritious berry soufflé!

- Beginner: Can I use fresh berries instead of frozen?
Of course! Fresh berries can work too, but you may need to adjust the sweetness and blend well to achieve the same smooth consistency.
- Beginner: How do I know if the gelatine is ready to use?
Follow the package instructions for soaking. You’ll usually need to add it to warm liquid to dissolve completely before mixing with the rest of your ingredients.
- Intermediate: Can I make this ahead of time?
Absolutely! You can prepare the soufflé up to a day in advance. Just keep it covered in the fridge until you are ready to serve.
- Intermediate: What is the best way to store leftovers?
Store any leftovers in an airtight container in the refrigerator. They will last about 2-3 days.
- Experienced: How can I enhance the flavor profile?
Consider adding a splash of vanilla extract or a bit of lemon zest to elevate the flavor and freshness. You can also experiment with spices like cinnamon for a different twist.
- Experienced: Can I substitute the gelatine for a vegan alternative?
Yes, use agar-agar as a plant-based setting agent instead of gelatine. Just follow the instructions for preparation as they differ slightly from traditional gelatine!
