Step 1

A truffle (from French ‘truffe’) is a type of chocolate confectionery made of chocolate ganache filling and is spherical in shape. Its name derives from its resemblance to the mushroom of the same name. Traditionally, truffles are round hand-rolled chocolate confections made of chocolate ganache filling (chocolate combined with cream and other ingredients), enrobed in tempered chocolate, and covered with cocoa powder, crushed nuts, or wafer crumbs. They can also be decorated with chocolate drizzle or other decorations.

The chocolate ganache filling can be made with additional flavors and include ingredients such as alcoholic drinks (cognac, rum, liqueur), fruit purees, nuts, pastes, syrups, essences, and more.

Truffles can be hand-rolled and round, shaped like drops made of non-stabilized chocolate ganache, cylinder-shaped, or in the shape of small elongated bars. They can also be placed into premade chocolate truffle shells or made with special silicone truffle molds. Regardless of the form, truffles are always glazed with tempered chocolate and topped with your choice of decorations.

Step 1: Combine the cream and sugar together, and bring the mixture to a boil. Add the coffee. Remove the pan from the heat, and leave it to sit for about 20-30 seconds.

Step 2: Pour the hot cream mixture over the chocolate callets and wait for a couple of minutes for them to melt. Stir occasionally to ensure all the chocolate is fully melted.

Step 3: Start whisking the ganache mixture from the middle out until it becomes perfectly smooth. Once the mixture has cooled to 35°C (95°F), add the butter and pulse the mixture with a blender. Then, pour in the liqueur and pulse again until you get a smooth, emulsion-like consistency.

Step 4: Cover the mixture with plastic wrap as closely as possible and leave it in the fridge for 24 hours to chill. You can also use a wine cooler for this step.

Step 5: Roll your truffles, then transfer them to the fridge, wine cooler, or freezer and leave them there for 8 hours to chill.

Step 6: Once chilled, glaze the truffles with tempered chocolate, then coat them in cocoa powder straight away. To do this, cover your gloves with cocoa powder, and roll the truffles in your hands until they are fully coated.

Step 7: Return the truffles to the fridge to prevent cracking due to rapid temperature change. The perfect thickness for the chocolate glaze would be about 2 mm (0.10 inch).
