Ingredients

The Pastry Base

250 grams (8.8 ounces) yeast-free puff pastry
15 grams (1 tablespoon) sugar
1 large egg
10 grams (1 tablespoon) flaked almonds
Cardamom or cinnamon, to taste

The Filling

300 grams (10.6 ounces) strawberries
70 grams (2.5 ounces) sugar
100 milliliters (0.42 cup) sparkling rosé wine
3 grams (0.1 ounces) agar

The Cream

200 grams (7 ounces) cream cheese
150 grams (5.3 ounces) heavy whipping cream
60 grams (2.1 ounces) powdered sugar
Vanilla, to taste

Instructions

Step 1

1. Defrost the puff pastry dough. Roll it out slightly and cut it into 9 equal squares. Brush each square lightly with beaten egg. Sprinkle sugar on half of each square, then fold them into triangles. Brush the tops with more egg, sprinkle with additional sugar, flaked almonds, and your choice of cardamom or cinnamon. Bake these triangles in a preheated oven at 392°F (200°C) until they are golden brown, for about 15-20 minutes. Remove them from the oven and let them cool.

Step 2

Tip: Use parchment paper on the baking sheet to prevent sticking and make cleanup easier.

Step 3

2. While the pastries are baking, cut the strawberries into small cubes. Combine the strawberries in a saucepan with the sugar, sparkling rosé wine, and agar. Bring the mixture to a boil, stirring constantly for about a minute. Remove from heat and let it cool down while stirring occasionally.

Step 4

Tip: Be sure to mix the agar well to avoid clumps in the filling.

Step 5

3. In a large mixing bowl, whip together the cream cheese, heavy whipping cream, powdered sugar, and vanilla until the mixture becomes fluffy and smooth.

Step 6

Tip: Chill the mixing bowl and beaters beforehand to help the cream whip up better.

Step 7

4. Once the pastry triangles have cooled, cut them in half horizontally, keeping a little bit attached at the fold. Fill each pastry triangle with the prepared cream mixture and top with the almost cooled berry filling. Optionally, sprinkle the finished pastries with powdered sugar before serving.

Step 8

Tip: Use a piping bag to fill the pastries neatly for a professional look.

Equipment

Rolling Pin

Essential for rolling out the puff pastry to the perfect thickness. Make sure to flour your surface to prevent sticking.

Pastry Brush

Useful for brushing egg wash on the pastry. This helps achieve a beautiful golden brown finish.

Baking Sheet

A large, flat baking sheet is perfect for baking the pastries. Line it with parchment paper for easy clean-up.

Cooling Rack

Allows the pastries to cool evenly, preventing sogginess. Ensure it’s clean and dry before using.

Sharp Knife

Necessary for cutting the pastry squares and later splitting them for filling. A paring knife works well for precision.

Mixing Bowls

Various sizes needed for preparing the cream and strawberry filling. Stainless steel bowls help keep ingredients cool.

Variations

For our gluten-free friends, simply substitute the puff pastry with a gluten-free version available at most grocery stores. Ensure to follow the package instructions for the best results.

If you’re looking for a vegan option, there’s no need to miss out on these delicious pastries! Use a vegan puff pastry and replace the egg with a mixture of 1 tablespoon of ground flaxseed and 2.5 tablespoons of water. For the cream, use vegan cream cheese and coconut cream instead of whipping cream. 🥥

Faq

  • What can I use if I don’t have a rolling pin?

You can use a clean wine bottle or any cylindrical object to roll out the dough. Just ensure it’s well-floured to prevent sticking.

  • Can I use frozen strawberries?

Absolutely! Just make sure to thaw and drain them well before using to avoid excess moisture in the filling.

  • How do I prevent the puff pastry from becoming soggy?

Make sure the pastries cool completely on a cooling rack. If stored, keep them in an airtight container to retain their crispiness.

  • Can I prepare the components in advance?

Yes! You can prepare the cream and strawberry filling a day ahead and store them in the fridge. Assemble just before serving for the best experience.

  • My pastries are browning too quickly, what should I do?

You can cover them with a piece of aluminum foil to prevent further browning while they finish baking.
